Step - By -Step Pizza Dough

recipe makes 1-3/4 pounds of Dough.

Equipment

  • a large bowl
  • small bowl

Ingredients
  

  • 1/4 Ounce One package of dry active yeast
  • 1 Tablespoon Sugar
  • 1-1/2 cups Warm water
  • 3-1/4 cups unbleached four prefer bread flour
  • 1/2 teaspoon salt
  • 1/4 cup olive oil

Instructions
 

  • in the small bowl, combine the yeast and sugar. Add warm water (~ 110 F)
  • if the yeast does not bubble with in 5 minutes. Discard and start again.
  • Combine the 3 cups of the flour and salt in the large bowl. Make a well in the flour and add the yeast and olive oil.
  • Stir until the mixture comes together. Begin at the center and work to the edges.
  • turnout the dough onto a lightly floured surface
  • knead the dough and add enough of the remaining flour until the dough is not longer sticky. about 10 minutes.
  • shape the dough into a large ball and back into the large ( lightly oiled) bowl.
  • cover the bowl and set in a warm place. let the dough rise until approximately doubled.
  • punch down the dough and reshape into a ball. cover with plastic and refrigerate until doubled. 20 minutes to an hour.
  • divide into portions ~ 7 of equal weight (4 ounces each). Freeze what you dont use.

Notes

during COV19 i find that i grill more that before. think about grilling this dough on the grill outside.
