Zucchini Pancakes
Turkish fritters with feta and scallion
- 3 medium zucchini shredded
- 1 pinch salt and pepper
- 3 large eggs beaten
- 1/2 cup flour
- 1 tablespoon olive oil
- 1 cup crumbled feta
- 3 scallions sliced
- 1/3 cup finely chopped dill
- 1 teaspoon baking powder
- 6 tablespoons vegetable oil
Yogurt Sauce
- 2/3 cup plain yogurt
- 2 toes garlic
- 1 pinch salt
salt the zucchini and allow to drain for 5 minutes. Transfer to dry towel and squeeze dry.
add the ingredients and mix well
cook on a skillet on each side - golden brown.
