Ingredients
  

  • 8 ounce flour
  • 2 ounce margarine
  • 1/4 pint milk
  • 1/2 ounce baking powder
  • 1 ounce castor sugar

Instructions
 

  • sieve the flour, baking poweder and salt
  • rub the fat to a sandy texture
  • make a well in the center
  • add the sugar and the liquid
  • gradually incorporate the flour, mix lightly
  • place on a greased baking sheet
  • cut cross half way through the rounds with a french knife
  • milk wash and bake
  • bake at 375F for 20 minutes.

Notes

the small amount of fat, rapid mixing to a soft dough and light hands are essential to a good scone.
