castor sugar
Instructions
sieve the flour, baking poweder and salt
rub the fat to a sandy texture
make a well in the center
add the sugar and the liquid
gradually incorporate the flour, mix lightly
place on a greased baking sheet
cut cross half way through the rounds with a french knife
milk wash and bake
bake at 375F for 20 minutes.
Notes
the small amount of fat, rapid mixing to a soft dough and light hands are essential to a good scone.
