Spaghetti con Peas

- 8 Ounces Uncooked Spaghetti look for heirloom Italian durum wheat flour in the ingredients
- 1/4 Cup olive oil extra virgin
- 2 Toes garlic large, minced
- 1/2 Teaspoon crushed dry red peppers Pereroncino crushed red peppers offers spicy heat
- 1/2 Cup dry white wine
- 1 Ea Lemon Cut into 1/4 inch rounds
- 1 Tablespoon Mint finely chopped
- 1 Pinch Salt kosher
- 1 Pinch Black pepper
Blanch the sweet peas.
Cook pasta in a large pot of boiling salted water. al Dente. Drain well
Heat the olive oil in a large skillet over medium heat.
add garlic and crushed peppers...about one minute
add white wine and lemon slices
simmer over medium heat.
add peas and drained spaghetti until the pasta is well coated. Remove from heat
add salt and pepper.
Garnish with Mint and serve.
