GARDEN PAVILION NOTE BOOK – Salmon and Radish Butter

A recipe from the garden. I like the idea of radish butter. if i can i will substitute radish sprouts for red radish.
The Burre Blanch remains the same.
Broiled Salmon with Radish Butter
Garden recipe
Ingredients
- 2 x 3 ounce Salmon
- 2 Tbsp. Butter
- 3 ounce radish
- 1 Tsp Chopped Shallot
- 1 Tsp Chopped Parsley
- 1/4 cup white wine
- 1/2 ea. Lemon Star
Instructions
- Broil the Salmon
- Sauté the Radishes in 1/2 the butter with the parsley and shallott
- add the white wine
- add the lemon Star on the plate.
- nape' sauce over the salmon.
