Carbohydrates are one of the three major nutrients needed by the body, along with proteins and fats. They are the body’s preferred source of energy and play an important role in growth, maintenance, and repair. While carbohydrates often receive criticism in today’s diet trends, they remain an essential part of good nutrition.

At their simplest level, carbohydrates are made from units of glucose, a simple sugar that serves as the building block for many other carbohydrates. Carbohydrates differ in the number of sugar units they contain and are commonly classified as monosaccharides, disaccharides, and polysaccharides.

Monosaccharides, often called simple sugars, are the smallest form of carbohydrates. These single-unit sugars occur naturally in foods such as fruits and honey. Because of their simple structure, they can be readily used by the body for energy.

Disaccharides are carbohydrates made up of two sugar units joined together. Common examples include:

  • Sucrose, found in cane sugar and beet sugar
  • Lactose, the natural sugar found in milk
  • Maltose, which is produced naturally during the germination of grains

During digestion, the body breaks down these larger sugars into simpler forms that can be absorbed and utilized for energy.

The largest group of carbohydrates is known as polysaccharides. These complex carbohydrates are made up of many sugar units linked together. Examples include the starches found in corn, wheat, potatoes, rice, and other grains. Because polysaccharides take longer to digest, they often provide a more sustained source of energy.

Some polysaccharides perform a different role. Cellulose and similar plant fibers, often referred to as roughage, cannot be fully digested by the human body. Although they do not provide energy directly, they are important for digestive health and help maintain proper function of the digestive system.

Regardless of their form, most carbohydrates are ultimately broken down during digestion into simple sugars, primarily glucose. This glucose is absorbed into the bloodstream and delivered to the body’s cells, where it is used to produce heat and energy. Every step taken in the garden, every task performed in the kitchen, and every thought processed by the brain relies upon this steady supply of energy.

The lesson from Chef G’s garden is simple: carbohydrates are neither friend nor foe. They are nature’s fuel. The key is choosing wholesome sources such as fruits, vegetables, whole grains, and legumes rather than relying heavily on highly refined sugars and processed foods.
