Notes from the Garden: What Cooking Does to Carbohydrates

Last time in the garden, Chef G shared a little about the different types of carbohydrates and how nature provides them in many of the foods we enjoy every day. We learned how the body uses them for energy. Carbs do not remain unchanged when they enter the kitchen. Heat transforms them in fascinating ways, affecting both flavor and texture.

1. Gelatinization: When Starch Meets Water and Heat

When starchy foods are cooked with moist heat, such as in boiling water, soups, gravies, or sauces, the starch granules absorb water and begin to swell. As the temperature increases, the granules eventually burst, releasing starch into the surrounding liquid.

This is gelatinization.

Gelatinization is what thickens a pot of gravy, turns a sauce silky smooth, or gives cooked rice and potatoes their tender texture. It also makes starches easier for the body to digest, allowing their stored energy to become more available.

Chef G says that a simple pot of soup is also a lesson in food science. As the starch thickens the broth, nature is quietly preparing those carbohydrates for digestion.

2. Dextrinization: The Browning of Starches

When starchy foods are exposed to dry heat, a different transformation occurs. The starch molecules begin to break down into smaller compounds called dextrins.

This process is called dextrinization.

Dextrinization gives bread its golden crust, creates the rich color of toast, and contributes to the appealing brown surface of baked and roasted foods. Along with color, dextrinization develops flavor and aroma that make baked foods so inviting.

Think of fresh bread straight from the oven. The crisp brown crust is evidence that dextrinization has been hard at work.

3. Caramelization: The Sweet Side of Heat

Sugars react differently than starches. When sugars are heated, they melt and begin to change color, turning from clear or white to shades of golden brown.

This process is called caramelization.

Caramelization creates the rich flavors found in caramel candy, roasted vegetables, baked fruits, and the browned tops of many desserts. As sugar changes color, it also develops complex flavors that range from sweet and nutty to deep and slightly smoky.

The delightful aroma of apples baking in the oven or onions slowly cooking in a skillet is often the result of caramelization.

The next time you cook, take a moment to appreciate the transformations happening before your eyes. The starches in potatoes are gelatinizing. The crust on bread is forming through dextrinization. The natural sugars in vegetables are caramelizing.

Cooking is more than preparing food. It is the art of guiding these natural processes to create flavor, texture, and nourishment.
