Notes from the Garden: First-Class and Second-Class Proteins

In our last garden note, we learned that proteins are made up of amino acids, the building blocks the body uses for growth and repair. Today, let’s take a closer look at the quality of proteins and why some protein foods are considered more complete than others.
Not all proteins contain the same combination of amino acids. The nutritional value of a protein depends on how many of the essential amino acids it contains and in what amounts. Traditionally, proteins have been divided into First-Class Proteins and Second-Class Proteins.
First-Class Proteins (High Biological Value)
First-class proteins, often called high biological value proteins, contain all the essential amino acids in good supply. These proteins are mainly found in foods of animal origin and are especially valuable because the body can readily use them for growth, maintenance, and repair.
Examples include:
- Meat: Myosin
- Fish: Myosin
- Eggs:
- Egg white: Albumen
- Egg yolk: Vitellin and Globulin
- Milk:
- Caseinogen
- Globulin
- Cheese:
- Casein
Because these foods contain a complete range of essential amino acids, they are often considered excellent sources of protein.
Second-Class Proteins (Low Biological Value)
Second-class proteins, also known as low biological value proteins, contain one or more essential amino acids in limited amounts. These proteins are found mainly in foods of plant origin.
Examples include:
Cereals
- Wheat: Glutenin and Gliadin
- Barley: Hordein
Pulses and Legumes
- Peas
- Beans
- Lentils
The principal protein found in many pulses is Legumin.
Although these foods may be lower in one or more essential amino acids, they are still important sources of nutrition and can contribute significantly to a healthy diet.
Nature’s Secret: Proteins Can Work Together
One of the most interesting facts about nutrition is that proteins can compensate for each other’s deficiencies.
A food that is low in one essential amino acid may be complemented by another food that supplies it in abundance. When eaten together, these foods can provide a more complete protein profile.
For example:
- Cheese and bread
- Beans and rice
- Lentils and grains
- Peanut butter on whole wheat bread
In the case of cheese and bread, the cheese provides amino acids that bread lacks, while the bread contributes amino acids found in smaller amounts in cheese. Together they form a more nutritionally complete meal.
This principle explains why many traditional dishes around the world naturally combine grains and legumes. Long before scientists understood amino acids, people discovered through experience which food combinations provided strength and satisfaction.

A gardener knows that no single plant can create a beautiful garden. Flowers, vegetables, herbs, and trees each contribute something different. Together they create balance.
Proteins work much the same way. Some foods provide a complete package of amino acids, while others contribute only part of the picture. Yet when thoughtfully combined, they can work together to provide the body with all the materials it needs.
The lesson is simple: nutrition is rarely about one food. It is about how foods work together.
