Ingredients
- Butter for the pan
- 1 1/4 cups whole milk
- 2/3 cup granulated sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon ground cardamom
- 1/8 teaspoon salt
- 1/2 cup almond flour
- 3 ripe peaches - pitted and sliced
- Confectioners' sugar for dusting
Instructions
- Preheat oven to 350F.
- Lightly butter the 9 x 13 inch pan.
- In a blender combine the milk, eggs, 1/3 cup of granulated sugar, vanilla, cardamom, salt and almond flour. pour a 1/4" layer and place into the oven. Bake 2 minutes or until a film of the batter is set. Remove from the oven and spread the peaches over the batter. Sprinkle the remaining granulated sugar over the peaches, followed by the rest of the batter. Bake until the Clafoutis puffs up. Test for doneness by poking a knife into the center - and the knife comes out clean (approximately 45 minutes to an hour). Dust with confectioners' sugar and serve warm.
Notes
- any stone fruit would be great .. perhaps next time cherries.
