The watermelon is a vegetable relative of the gourd. It came from Kalahari dessert of Africa. It naturally contains low calories – lots of water about 92% [cool – but who figured that out?] and abundant A and C vitamins. The Juices from todays watermelon are destined to become frozen and transformed into popsicles

Watermelon Popsicles

Hot for August.
Course Dessert

Ingredients
  

  • 2 1/2 cups Seeded watermelon
  • 1/2 cup Frozen Strawberries
  • 6 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon light cornsyrup

Instructions
 

  • combine in a blender
  • strain
  • freeze overnight

Start of summer and the much anticipated crawfish boil:

As the days grow longer and the suns warmth intensifies, the arrival of summertime is eagerly anticipated. One of the invites we look forward to is the gathering of friends at the Crawfish boil. all the neighbors gather an bring something for the buffet. Gathered under the clear blue skis, the table set.

The pour is spectacular. The boil has perfectly cooked potatoes, sausage, corn an crawfish. During this yeas festivities – i had coached on how to approach eating crawfish as it seemed to be a bit of a dilemma for a few guests..

We came back from Creighton today Welcome weekend showed us we have a common area kitchen to work in. My thoughts are to weekly share common food with new friends. A simple “Blue Jay – Blue Berry Cobbler” is one to share on a hot Omaha evening.

Equipment

  • 10" Cast Iron Pan

Ingredients
  

  • 10 oz BlueBerries
  • 3 Tbsp lemon Juice fresh
  • 2 tsp sugar plus 2/3 cup
  • 1 tsp Kosher Salt
  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter one stick
  • 1 tub cool whip

Instructions
 

  • preheat the oven to 350F
  • Toss Blue berries, lemon juice, 2 Tsp sugar and a pinch of salt in a medium bowl.
  • using your hand – crush the blueberries. let them sit
  • Whisk flour, baking powder, remaining 2/3 cup sugar and the salt. Stir in the milk.
  • melt the butter in the cast iron pan.
  • remove the pan from the heat: scrape in the batter.
  • spread the batter evenly and spoon in the blueberries.
  • Bake until the cake is golden brown. 45-50 minutes.
  • serve warm with the cool whip
