GARDEN PAVILION NOTE BOOK – Salmon and Radish Butter

A recipe from the garden. I like the idea of radish butter. if i can i will substitute radish sprouts for red radish.

The Burre Blanch remains the same.

Broiled Salmon with Radish Butter

Ingredients
  

  • 2 x 3 ounce Salmon
  • 2 Tbsp. Butter
  • 3 ounce radish
  • 1 Tsp Chopped Shallot
  • 1 Tsp Chopped Parsley
  • 1/4 cup white wine
  • 1/2 ea. Lemon Star

Instructions
 

  • Broil the Salmon
  • Sauté the Radishes in 1/2 the butter with the parsley and shallott
  • add the white wine
  • add the lemon Star on the plate.
  • nape' sauce over the salmon.
