Road Trip ‘Head out for the scenery, but also for the food’.

Life and Culture, Wednesday July 2021 wrote about heading out to Jackson Hole for the scenery, but also for the food. Well this road trip 2021 was not destined … still to make it to Jackson Hole. As destiny had it we were on the wrong side of the Glen Wood Springs detour. The Detour took us South across Independence Pass. But lets start and the beginning of the road trip… “Let’s start at the very beginning, a very good place to start…” Julie Andrews. The road trip this summer caught us riding the front of monsoon weather. We rode that wave to the beach. The first stop of travel took us to LaPosada de Santa Fe. The hospitality delightful and the grounds of the resort and spa are a delight. Definitely worth a the road trip. the Santafe Fe Square took cover as the deluge of rain came in.

Quietly we found St Frances dancing on the water and in every corner of the square exploding with local color. Cactus toast is also a first. In Santa Fe Covid Protocols are relaxed. People are grateful to be out.

As all took shelter in the plaza we are lucky to dine at the roof top cantina of the Coyote Café. It has been overdue to return to SantaFe and over due to be at an open restaurant.

Creative and delicious cuisine – after a safe 6 hour drive on the front edge of the monsoon rain – is our reward. The café atmosphere is relaxed and service is perfect. Favorites – from the Coyote Café menu – is Al Pastor Tacos, Pork Nachos and Cubano.

Gracias Cocina.
