Scones
Ingredients
- 8 ounce flour
- 2 ounce margarine
- 1/4 pint milk
- 1/2 ounce baking powder
- 1 ounce castor sugar
Instructions
- sieve the flour, baking poweder and salt
- rub the fat to a sandy texture
- make a well in the center
- add the sugar and the liquid
- gradually incorporate the flour, mix lightly
- place on a greased baking sheet
- cut cross half way through the rounds with a french knife
- milk wash and bake
- bake at 375F for 20 minutes.
Notes
the small amount of fat, rapid mixing to a soft dough and light hands are essential to a good scone.
