Travelers Culinary Adventure tied to swim … Fueling the Finish: Latin Asian Tacos from Chuey Fu’s

After three water polo matches successfully done and two to go – days of competition, the varsity legacy team was running on adrenaline and empty stomachs — that blend of exhaustion and hunger that makes any good meal taste even better. Parked on the front drive of the aquatics complex, Huey Flu’s food truck was waiting, the scent of sizzling meat and soy drifting across the lot like an invitation we couldn’t refuse.
I went for the Korean tacos, a cross-Latin Asian food that somehow fits during the match — a little heat, a little sweetness, and a whole lot of flavor. The blend of marinated beef, crisp slaw, and a drizzle of spicy sauce hit that ideal note helping recovery.
By the second taco, spirits were lifting. the kind of fuel you hope carries you to victory… or, at the very least, helps you fowl at the 5yard and gets you EJ.
