A Family Tradition: Spaghetti and Peas

In our family, spaghetti and peas isn’t just a dish; it’s a comforting ritual that brings us together, reminding us of simpler times and shared stories. Growing up, it was the meal that brought everyone to the table, a reliable classic that somehow managed to suit our families taste. Spaghetti con Peas
Ingredients
- 8 Ounces Uncooked Spaghetti look for heirloom Italian durum wheat flour in the ingredients
- 1/4 Cup olive oil extra virgin
- 2 Toes garlic large, minced
- 1/2 Teaspoon crushed dry red peppers Pereroncino crushed red peppers offers spicy heat
- 1/2 Cup dry white wine
- 1 Ea Lemon Cut into 1/4 inch rounds
- 1 Tablespoon Mint finely chopped
- 1 Pinch Salt kosher
- 1 Pinch Black pepper
Instructions
- Blanch the sweet peas.
- Cook pasta in a large pot of boiling salted water. al Dente. Drain well
- Heat the olive oil in a large skillet over medium heat.
- add garlic and crushed peppers…about one minute
- add white wine and lemon slices
- simmer over medium heat.
- add peas and drained spaghetti until the pasta is well coated. Remove from heat
- add salt and pepper.
- Garnish with Mint and serve.
