Awakening a (#wet) Spring

It has been raining for 3 days – seems like raining straight for 3 days. A bit unusual. How ever with the river rising and God willing the tunnel did not flood … it is time for comfort food. Spring Vegetables are still out a bit. Farmers Markets not open …yet.

Ingredients

- 1 Cauliflower
Sauce
- 2 cups checken Volute,
Bread Crumbs
- 1/2 cup Home made Bread Crumbs
Instructions
- trim the cauliflower
- cut the cauliflower into thirds
- brush the cauliflower with abit of olive oil
- char the cauliflower on the grill (medium rare).
- transfer into a earthenware baking dish.
- coat the top with Sauce (coat – but not swimming)
- add bread crumbs
- brown under the broiler of the oven.
