Fresh Corned Beef Hash
Breakfast eggs – the culinary thread is the movie reference from ” Runaway Bride” So – How do you like your eggs?
Eggs for breakfast in March – well tis’ the St. Patties Month. I like mine on fresh corned beef hash. Corned beef hash with sauteed spinach, poached egg and hollandaise sauce.

Fresh corned beef hash, sauteed spinach, poached egg
Ingredients
- one cooled cooked corned beef, two cooked potatoes, one onion, fresh spinach, poached egg, hollandaise sauce.
Instructions
- Prep: I like corned beef with a bit of charred from the barbecue and braised. Cool the CB.
- in the same white stock as the corned beef, cook a few extra potatoes, set aside and cool. dice the potatoes.
- small dice 1/2 onion and saute. when the onion is transparent add the potatoes. when the potatoes are golden brown, add the corned beef. taste and adjust the seasoning.
- saute the spinach
- poach one egg.
- assemble.
