Fresh Corned Beef Hash

Breakfast eggs –  the culinary thread is the movie reference from ” Runaway Bride” So – How do you like your eggs?

Eggs for breakfast in March – well  tis’ the St. Patties Month. I like mine on fresh corned beef hash. Corned beef hash with sauteed spinach, poached egg and hollandaise sauce.

Ingredients
  1. one cooled cooked corned beef, two cooked potatoes, one onion, fresh spinach, poached egg, hollandaise sauce.
Instructions
  1. Prep: I like corned beef with a bit of charred from the barbecue and braised. Cool the CB.
  2. in the same white stock as the corned beef, cook a few extra potatoes, set aside and cool. dice the potatoes.
  3. small dice 1/2 onion and saute. when the onion is transparent add the potatoes. when the potatoes are golden brown, add the corned beef. taste and adjust the seasoning.
  4. saute the spinach
  5. poach one egg.
  6. assemble.
