Tomato Salad

Glorious way to celebrate the Season from Saveur. It is still hot today. Tomatoes are abundant. Nothing like plucking a tomato from the vine and eating while warm and dusty. Yumm.
This summer salad showcases sweet peak-season tomatoes, which play well with mint and olive oil.

Ingredients
- 2 pounds cherry tomatoes prefer yellow
- 1/2 Red Onion
- 3 tbsp red vinegar
- 1/4 cup olive oil
- 1 pinch salt
- 1 pinch crack black pepper
- 1 cup mint
Notes
notes: added a sprinkle of truffle salt to the finished plate and the taste was elevated. Finished with balsamic glaze reduction.
