NOTES FROM THE GARDEN ~ Apple Star with Corn Salad

Intrigue has me share this recipe from the gardens archive. The diverse European influence into recipes and local produce. Apple and Corn Salad. Hmm.
It is corn season in Colorado…. and I am intrigued.
Apple Star with Corn Salad
Equipment
- Small stock pot to simmer and cook the corn
Ingredients
- 6 medium cobs of corn fresh – pealed
- 1 small IceBerg Lettuce
- 1 large Red Bell Pepper
- 1/2 cup Soya Bean Oil
- 2 Tbsp. Lemon Juice
- 2 Tbsp. Chopped Parsley 3 finger Pinch. Parsley Coarse chopped
- 1 pinch salt and pepper
- 6 large Red Delicious Apples
- 3 Tbsp. roasted sunflower seeds shucked and salted at roast
Instructions
- Cook the corn in salted water with a bit of milk in the water. Love this part. "After you have reached the desired cooking grade, take the cob out of the water to cool off.
- Who talks like that any more? "desired cooking grade" . Love, Love it.
- Remove the kernels from the cob and mix with the chopped peppers, lettuce and parsley.
- Hmm. where are we going?
- Add Lemon Juice, Soya Oil, Salt and Pepper. Mix Well
- now, Cut the apple into 1/8 and remove the core. Place the apple into a star formation and fill with corn salad.
- Complete and garnish with sunflower seeds and parsley sprigs.
