The recipes aren’t just about the ingredients, they are testament to tradition and the moments that shaped us. Our recipe cards are filled with heart warming anecdotes, offering glimpse into the kitchen of the past and people that brought these dishes to life. Every dish is not only a recipe but a cherished family story – both to be shared.

Grandma Butterfly’s Porcupine Meat Ball

Equipment

  • Sauce pan to sear
  • Large Mixing bowl
  • Shredder
  • Baking Dish

Ingredients
  

  • 1 Medium White Onion Pealed, chopped finely
  • Many Garlic toes Pealed, Minced
  • 4 each Carrot peeled and shredded
  • 2 each eggs
  • 1 tablespoon olive oil
  • 1 cup uncooked rice
  • 2 pounds Minced Chicken

Spice

  • pinch of Oregano
  • pinch of Sage
  • pinch of Cinnamon
  • pinch of Onion powder
  • pinch of Garlic Powder

Sauce

  • Tomato

Instructions
 

  • make a double batch as the flavors tomorrow are terrific. POW
  • Mix every thing well in a large mixing bowl
  • Form the meat balls
  • Sear the meatballs. Each side for about 1 minute
  • place the meat balls into a baking dish
  • top with tomato sauce
