All over again, summer is ending and the last hurrah for 2020 summer is upon us. Covid Weeks of summer are game changers. The impact to our industry is devastating and changed the industry. Hope keeps us looking forward. It is summers last Hurrah.

Social Isolation ~ Cooking Projects. Day 65 == Porcupine MeatBalls

Day 65 of social isolation had a twist. Zoom Call while cooking. Food Netwok sent Porcupine Meatballs as the recipe of the day. The Recipe opened up childhood flood gate of comfort home food. the recipe was forwarded to my siblings and share with brother and sister in-laws. Time to cook is 5:oo pm MST. the onslaught of confirming follow up texts lasted for 2 days. It is easier herding cats that coordinating Zoom Cooking.

The main thought is the gathering. The meatballs when baked with whole grains of rice look like quills of the porcupine. The main trick to to assure the rice is cooked through – prior to serving. Even if this means brown the meat balls, baste in the sauce and then serve…. The Meatloaf Porcupine, fresh tomato sauce Porcupine meatballs, rice-a-roni and mushroom gravy porcupine, Chicken Dumpling porcupine and Redvines with no porcupine all showed up – and dropped off during the 3 hour Movable Zoom feast.

Very festive during social Isolation.

We had white hominy in the freezer. the stock is dizzy chicken stock and inspired Pozole. Roasted pumpkin is from October…and also from the freezer. Garni includes cilantro, marigolds, chicken, artichoke, tomatoes, cucumber. Cook what you have.
